Two Loaves of Chocolate Chip Zucchini Bread
Equipment
- 2 9" x 5" bread pans
- 1 Egg beater
Ingredients
- 3 eggs
- 1 cup butter or virgin coconut oil
- 2 cups coconut palm sugar you can use white sugar 1:1 ratio
- 2 tsp vanilla extract
- 2 ½ cups zucchini
- 1 ripe banana or 1/2 cup pineapple
- 3 cups sprouted spelt flour
- 2 tsp baking soda
- ¼ tsp baking powder
- 1 tbsp of cinnamon more or less
- 1 tsp nutmeg more or less
- 2 pinch sea salt
- 1 cup semi-sweet chocolate chips
- 1 cup crushed walnuts optional
Instructions
- Preheat oven at 350 F
- Combine eggs and butter together in a large bowl and beat well.3 eggs, 1 cup butter
- Stir in sugar.2 cups coconut palm sugar
- Mash zucchini and banana together with vanilla extract and then stir into the eggs, oil and sugar.2 1/2 cups zucchini, 1 ripe banana, 2 tsp vanilla extract
- In another bowl combine flour, baking soda, baking powder, cinnamon, nutmeg, and salt.3 cups sprouted spelt flour, 2 tsp baking soda, 1/4 tsp baking powder, 1 tbsp of cinnamon, 1 tsp nutmeg, 2 pinch sea salt
- Gradually stir the dry mixture into the wet mixture until it is all blended together.
- Add the chocolate chips and/or walnuts.1 cup semi-sweet chocolate chips
- Grease two bread pans with oil or butter.
- Pour evenly into two bread pans.
- Bake in the oven for 1 hour.
- Cool on racks.
- Slice and serve. Enjoy!
