Double love for two loaves of chocolate chip zucchini bread! It is so freakin’ yummers! I don’t know how else to describe it.

In 2014, for the first time ever, I planted my own garden with some help from a friend who provided me all the seeds and a ton of tips. I didn’t plant a large garden but zucchini was definitely one of the veggies I grew.

I’m a huge zucchini lover. I can eat it raw, in stews and soups, and of course in a bread with chocolate chips. Yes please!

Chocolate Chip Zucchini Bread Recipe Tips

  • If your zucchini is really moist, you can squeeze out some of the water.
  • Instead of using a banana with the zucchini, you can use pineapple.
  • Use yellow or white sugar instead of coconut palm sugar.
  • Coconut oil is a great substitute for butter.
  • Add walnuts if you like, or not.

Two Loaves of Chocolate Chip Zucchini Bread

This recipe makes two loaves but you can cut it in half to make one. It's great to have two loaves because you can freeze one for later. The walnuts are optional. Take note in the recipe the various options and substitutes. Most important of all, enjoy!

Equipment

  • 2 9" x 5" bread pans
  • 1 Egg beater

Ingredients
  

  • 3 eggs
  • 1 cup butter or virgin coconut oil
  • 2 cups coconut palm sugar you can use white sugar 1:1 ratio
  • 2 tsp vanilla extract
  • 2 ½ cups zucchini
  • 1 ripe banana or 1/2 cup pineapple
  • 3 cups sprouted spelt flour
  • 2 tsp baking soda
  • ¼ tsp baking powder
  • 1 tbsp of cinnamon more or less
  • 1 tsp nutmeg more or less
  • 2 pinch sea salt
  • 1 cup semi-sweet chocolate chips
  • 1 cup crushed walnuts optional

Instructions
 

  • Preheat oven at 350 F
  • Combine eggs and butter together in a large bowl and beat well.
    3 eggs, 1 cup butter
  • Stir in sugar.
    2 cups coconut palm sugar
  • Mash zucchini and banana together with vanilla extract and then stir into the eggs, oil and sugar.
    2 1/2 cups zucchini, 1 ripe banana, 2 tsp vanilla extract
  • In another bowl combine flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
    3 cups sprouted spelt flour, 2 tsp baking soda, 1/4 tsp baking powder, 1 tbsp of cinnamon, 1 tsp nutmeg, 2 pinch sea salt
  • Gradually stir the dry mixture into the wet mixture until it is all blended together.
  • Add the chocolate chips and/or walnuts.
    1 cup semi-sweet chocolate chips
  • Grease two bread pans with oil or butter.
  • Pour evenly into two bread pans.
  • Bake in the oven for 1 hour.
  • Cool on racks.
  • Slice and serve. Enjoy!
