Red Cabbage & Carrot Coleslaw
This red cabbage and carrot coleslaw is supercharged with flavour. It includes apple and cheese all mixed up with a delicious dressing. Pairs wonderfully with pulled pork sandwiches. So many yummy flavours in one bowl. And of course, you can alter the ingredients if you want it a bit more cheese, or no cheese at all. Make it how you like it. Enjoy!

- 3 carrots peeled and grated
- ½ medium red cabbage shredded
- ¼ tsp. coconut sugar
- 2 tbsp. apple cider vinegar
- 1 tsp. Dijon mustard
- 4 tbsp. mayonnaise
- 1 apple peeled, cored and grated
- 1 cup 115g cheddar, grated
- salt and pepper
Coarsely grate the carrots and finely shred the cabbage and transfer into a large bowl.

Season with salt, then add the sugar and vinegar and mix everything together.
¼ tsp. coconut sugar, 2 tbsp. apple cider vinegar
Leave to stand for 20 minutes.
Add in the grated apple and cheese.
1 apple, 1 cup 115g cheddar, grated
Then stir in the mustard and mayonnaise mixing well until combined.
1 tsp. Dijon mustard, 4 tbsp. mayonnaise
Season to taste with salt and pepper.
